This wine is made according to an old tradition, as handed down by Francesco's grandfather. In August, Francesco and Nicoletta leave the best grapes from century-old Zibibbo vines to dry very slowly on the ground between the vines. A wild Zibibbo, macerated for months and matured in glass demijohns. Intense and sweet, full of umami, but fresh and very energetic.
